Learn his moveset and get comfortable around him
If youre not confident use frequent wall flinches, traps or mounts to gain extra openings

Or you could use SOS to get some backup to make the first hunts (a lot) easier

his attacks are flashy, but dont be enchanted.

pick a location to fight where you aren't impeded, his sudden leap and back slam is difficult to predict but learn his movements to avoid it.

consider changing to a shield weapon + full suite of crutch skills if you can't quite figure it out, it will give you time to learn it.

any time you see it hop back and it's not in its charged mode, it will either try to charge or do a running attack. it leaves itself wide open to wall bangs.

Well problem is that youre letting him kill you. Stop letting him do that.

Can't give any meaningful advice on how to fight it, but at least I would recommend some Dragon element resist & lv1 Stun resistance.
