Monster hunter is a game about adapting, you should figure out more specifically what is causing you to die in this battle, if it is something you can fix with decorations or better gear then you should play around with your equipment and try again.
Now, if even with best available gear and decos you are still struggling then it is just a matter of learning the monster attack patterns so you know when to dodge and when to attack, in which case try again until you get the hang of it.
will if you're a CB main try using GL with guard 5 and lvl 3 artillery. just poke blast poke blast and just guard if necessary.
1.dont atk relentlessly , learning enemy movement is a key....combining atk and dash is better than completing combo , only do that when enemy downed
2.your gear is not your only weapon
Look for slinger ammo...look underrated but actually can flinch enemy , natural trap such as flash fly , natural healing plant , if u have iceborne that even easier...have u complete clutch claw tutorial ? Nasty lil weapon there
3.bring item
Shock trap is good additional , bomb too if u want surprise em when sleep
When monster sleep , it usually a small room...u might have trouble fight em there...use dung bomb to scare em to larger space

Try to get at least 1 point in Guard, Focus 3, and Health Boost 3 (you can slot in decos for that). Then the rest in whatever offensive skills, it's not too important at this point.

For weapon, any Impact Phial CB will do, like Ore, Bone, Great Jagras, or Rathian tree. This will be your default weapon for general hunting with SAED style.
You can also make the Beotodus CB, which despite being the first monster in Iceborne, gives some of the strongest Ice weapons in the game. Many monsters are weak to ice, including Coral Pukei.
If you use the Beo CB, Coral Pukei is a great target to practice Savage Axe style, you can hit through the entire body from head to tail with ED2, it has fairly big telegraphs for you to dodge.
waterproof mantle is huge in this fight, prevents the blight (1/3rd stamina regen penalty) and defends against the water element damage he deals.
chopping his tail off removes his 'helicoptering' attack.
with the chargeblade, choppping this off with savage axe mode should be pretty trivial, if you're not sure how to enter savage axe mode, look up a guide for the movesets required.
the safest place to be is 90 degrees to his side, so the v-blasts and poison won't hit you, but you can still smack him around. dont commit to full combos if he's catching you, just do a couple attacks or single big morphslash, wait till he's showing some weakness.
if he's one hitting you, that's a sign its time to upgrade your armor set or spend / farm some armor spheres with the bounty board, or put some fuel in the steamworks.

it'll help you round out your build, and tell you what decos you need. many of these are 'meta' builds, and have almost zero defensive skills so, be sure to adjust it by adding defensive stuff to suit your comfort level. gl broski
Dont bother w armor skills, Even the weakest master rank gear can out perform the best high rank armor. Just focus on having solid defenses.
Coral has a lot of nasty AOEs and water beams, but being too close( and not right in his face) should help turn those attacks into damage openings. Also tenderize if you can. Master ranks are built around the tenderize mechanic, so they will be noticeably tankier if you dont use it.
