If you have Steam Game Recording enabled, try disabling it. Also try disabling Steam overlay.

MHW was last updated 1 month ago (only to add the MH Wilds ad on the main menu, nothing changed about performance/stability), and this is the first time I've seen your specific issue described.
Other recent known issues don't match your description:

I currently have another game installed - Satisfactory and it's working normally there.
I seem to recall a possibly-similar issue with the Wilds demo. I think the solution there was deleting/renaming some kind of Windows 11 error file which was preventing the game from going, but I'd need to check that Discussion board. Otherwise I'm baffled.
Question for all 4 of you: Does the problem only happen if you play MHW for a long time in the first session? Or does it crash on the 2nd launch if you simply start the game once, quit from the main menu, and start it again?
Edit: Solution that worked for me - i suspected the game didnt shut down properly so I signed out on windows (force closes all processes) and signed back in again and the game works fine. Dont even have to restart pc.
The only solution I've found is to restart steam when this happens, at least for now.
If it only happens with mods, can you try something.
Edit loader-config.json in your MHW folder
Set "logcmd" to true
Set "logLevel" to "INFO"

Make sure to manually save if you're using Notepad, because recent versions of Windows 11 helpfully let you quit Notepad without saving :)
Now when you start the game, a console window should appear with the Stracker's log.
1. When you quit the game, does the console window automatically close? (If it doesn't, you can just close it after the game is fully closed. Don't close the console window before you save and quit the game, because it will also kill the game process.)
2. After the game and console window are both closed, can you start the game from Steam a 2nd time?
