Since you're in Guiding Lands, then yeah you can get layered armors of the monsters you've been able to make up to now by simply fighting them in Guiding Lands and picking up the shinies they drop and then going to the Forge -> Layered Armor section to see the other GL mats you'll need for each. The earliest Hunter and Leather armors only need rocks and bones from the gatherables IIRC. The rule of thumb is you can get the LR/HR layered armors from the monsters and then their MR layered version from their tempered versions in the Guiding Lands.
TIP: Make sure to have at least Geology 1 skill when in the Guiding Lands, it'll sometimes double the pickups on the white shinies the monsters drop cutting down the grind.
