Frostfang IG is also good for dealing with alatreon, but personally I'd say just get an elemental kinsect if you're planning to hunt ala.
Let me be brief about why Frostfang IG is good:
-Accessible right after story, and relatively quick to make
-Can be health augmented at MR 70, rather than superior options at MR 100+
-Spirit & Strength Kinsect bonus
-Some natural affinity, some purple and very long white sharpness bar, solid raw, solid ice element.
It's the combination of all those that makes it "good for a lot of things", as you say the streamer answered you.
Now, for other weapon types, the only one I recall being outright bad is the HBG. There are some lesser ones, like the HH I think, but they all otherwise have that same affinity, sharpness, raw, ice element stuff.
So, are they good allrounders? Most are yes. But are they superior to other later allrounders? Almost certainly no. Are they good on the ice weak stuff? Yeah, and they will keep up with otherwise superior allrounder options on those fights.
In a manner of speaking, I can use frostfang IG in the guiding lands without ever bothering to switch right? The raw and purple more than make up for it without having to bother if the monster is strong or weak to ice?
I'm assuming the health augment would mean it's definitely a staple IG since the other options are 30+ MRs later.
One thing I'm having trouble trying to wrap my head around is the ice element part, can the bad elemental match up be ignored entirely if I just stick to the frostfang IG for a good long time? I've read that IG is better off treated as raw, so I'm assuming the ice element is disregarded regardless of match-up because everything else outweighs it?
Interesting. So if I don't bother with Kjarr weapons, Frostfang should do well? Are there frostfang weapons that won't do well with alatreon?
Frostfang is mostly just quick to obtain and a strong ice option. Also a strong early general purpose option, especially with great natural sharpness.
Once you get Raging Brachydios, Frostfang is an overall number 2. Minus monsters with ice weakness, and possibly if you don't utilize some sharpness management skills/items (depends on weapon type).
Note on Alatreon with IG specifically, just use Raging Brachydios IG if you have it, leave the element damage work to your bug. For other weapon types, Frostfang's weapon will do just fine.
Yes, your bug really does that much element damage; this is why the element portion of the IG itself, while helpful, is negligible for general purposes. And why you care more about maximizing raw damage.
Also, all that is said about Raging Brachydios applies to Fatalis even more. But at that point, you're done progressing.

Now, for kjarr ice compared to Frostfang: that's another thing altogether.
Let's make things straight here: If you can win with a low rank weapon, you're fine.
So yes, of course Frostfang is fine if you just want an ice weapon for most weapon types.
Frostfang is not your best choice for most cases, but there is a caveat for it as a best choice with LBG for a specific shot type (as mentioned by someone else). And, if you build specifically for the best overall damage that also utilizes ice element damage heavily, they may be among your best choices.
If you want to discuss what works for Alatreon, what are good or bad for weapon types, and/or the best ice choice, don't mix that together with "general purpose IG and SnS". You're asking for far too many things all at once, when they are entirely different things altogether.
Don't let those different questions mix together, because that is why you are getting tripped up, hung up, and confused.
