I want to give gunlance a try, so what is a versatile gunlance, and what's a good armour build ?

depends on the type of gunlance
long is entirely charged shelling, wide is poke shell, normal is full burst
long is one of the easiest weapons to build for, normal is one of the hardest
Zorah magdaros armor set is very good for gunlance due to the artillery secret and it has some good skills id also recommend using the ironwall charm. The ironwall charm is one of the most useful charms for gunlance and lance and personally i use the Viper-kadachi gunlance because the paralysis makes it easy to land wrymstake blast and it has long shelling lvl 6. I wish you the best of luck if your gonna try gunlance out.
you need to know the type of shelling in gunlance, there's 3 types : normal, long, and wide.
each type play differently.

I recommend using long or wide shelling, it's easy to build and most of new gunlance user bad with normal playstyle.

capacity boost and artillery skill is a must and you want to max it with 3 pieces of zorah armor.

Slinger capacity boost is a massive quality of life improvement, as it substantially increases the amount of time a wyrmstake blast stays lodged in the monster. I always use 2 piece silver rathalos to get the capacity boost secret.

Earplugs are likewise for QOL, as they make it much easier to lodge the WB while the monster is wasting its time roaring. Keeping a WB in the monster for the entire duration of the fight is integral to the gunlance, as it takes your shelling from near useless to incredible.

3 pieces of Zorah set is a common recommendation, but personally I don't feel that the extra 20% of damage artillery secret offers is worth the crap skills and poor slottage Zorah armour forces you to deal with.
I like the head, chest and boots from the Zorah armor since it has artillery on it, and earplugs + tremor resist 2 are useful.
Flinch Free 1 helps not only in multiplayer, but for some monsters too.
