You read the tutorial, right? It's for people who have already beaten the base game and want to rush a character through to Iceborne content, not designed to carry new players through it.
Defender gear lets players who would otherwise get frustrated 5 or so hours in get more out of the game by carrying them through a chunk of the base game until they still get frustrated and quit or try and rely on SoS forever. The gear doesn't fundamentally change anything about these players it just extends the period of time they will play and makes them more common as a result.
If you have an intention to actually learn and improve at the game then that is going to happen no matter what you use but Defender gear actually does help the learning process in a pretty significant way. Not carting as easily means you will spend more time actually fighting the monster, which means more time to see what the monster does and learn how to respond.
I have a purely defensive set even in master rank that I use at times when I just want to practice I.Frames and learning attack windows without having to worry about the dead air from carting or restarting.
if you want to use it, use it. if not, don't. that's the nice thing about options... they are optional.
It will steal the feeling of growth from you.
Only use it if you are struggling enough to make you feel like quitting the game.
It may be your saving grace at that point.
It was for one hunter, I remember it well. He was thankful for it.
The defender armours though.. I'd say stay away from them if you can. They are chocked full of defensive abilities which enable you to facetank most monsters with ease.. and facetanking is not sustainable in the late game where monsters hit harder, and learning to evade monster's attacks is pretty much a prerequisite for clearing the mission.
TLDR, go ahead and experiment with the defender weapons. Avoid the defender armors if you can.
