On base game, you can only mount a monster and backstabbing it till either you executed a mount finisher or it shake you off
Your Palico can also tame and ride certain monsters into battle, but the usefulness of this is suspect. It definitely is a novelty.
The closest you come to a mount is either performing a mount attack (bonus points if you're mounting Kirin) or when you travel between areas and hook onto your wingdrake. If you want to really stretch it, you spend a good long time on the back of Zorah Magdaros as you ride him into battle, I guess.
