What are they and what do the stars in the field guide mean?

stars mean higher weakness.
Ailments>More prone to them (para/sleep/blast/etc)
Elements>more hit values to them (fire/drag/water/thunder/etc)

Do note that elements have certain conditions like for this "part" it needs to be broken first for the element to be effective

They're effects that can translate into bonus damage or faster application depending on how many stars of the element that monster has on the field guide; more stars means they're more susceptible to that particular element or ailment.

Elements are things like fire, ice, thunder, water, and dragon. These are simply additional damage that weapons can deal, and the more stars there are the more damage a monster takes from it.

Ailments (statuses) are things like poison, paralysis, blast, and sleep. After enough damage has been done, the status will take effect. If you use a poison weapon, a monster will become poisoned. Each time the effect triggers the monster becomes resistant to it, so it becomes more difficult to apply again and may have a shorter duration. More stars means it is easier to apply the status, or it may do more damage.
