You can break their heads - becomes tattered and effects the monster in combat, such as Rathian/Rathalos being unable to spit fire for a while, they just cough up harmless sparks and give you a dirty look. Kulu-Ya-Ku will lose his head feathers and gain a really battered face-lift.
You can typically break some legs and some arms. You can typically break off horns. You can typically sever the monsters tail and loot it for extra material. Then there are special cases such as the Sioth's or Barroth who cover themselves in mud (defensively) which can break off and re-expose the weak-spots (which are also breakable), or other monsters with more specific weakspots.
Just don't expect them to be oozing 20 billion gallons of blood and lose all their body parts. These are massive monsters with strong frames and thick, leather-armor-like skin. The most you'll see is a super-tattered monster who is sick of having you as their chiropractor - so much so that they try to limp off to bed.
Similarly, breaking their heads doesn't make them incapable of spitting fire. At all. That's an effect of exhaustion and can happen any time with or without head break being a thing.
Rathian can’t poison you without her tail. (Rathalos can regardless)
Diablos with at least one horn can get embedded in some rocks if it charges into them. Without either horn, it trips if it hits one of those rocks.
Breaking TziTzi’s head gives it a chance to fail to use its light emitters (NOT a guaranteed fail)
Etc. etc. So yes, some part breaks do impact the fight, but I’d guess 80% don’t.
No, it was indeed Toukiden 2, where you could break monsters (oni) parts and that would completely change it's moveset. Yeah, Toukiden is a little lackluster if compared to Monster Hunter, but is still a great game and I love it.
I'm 90% sure that when I break Rathalos' wings, he'll sometimes try and fly but lose his balance and stumble a bit. This has happened in hunts that didn't last nearly long enough for him to be exhausted, too. It won't stop him from flying entirely, but there's a noticeable difference.
Damaged bodyparts cause monster to deal less damage with them. Tail-less monster will still do tail attacks, but they be much weaker and have shorter range. Same apply for horns. Special effects will be more rare, like odoragon won't make you bleed much with broken claws.
Also, breaking some parts is easy topple for a monster, like odoragon claws or nergigante thorns. Break smartly for best effect.
