Co op is yeah, kinda clunky and not that good but at least it is workable and not that bad.
That is the nature of Monster Hunter, slow paced game with a "Clunky" combat in your definition.
Edit: You could run pretty much circles around Rajang while having no trouble, and even perhaps without the wirebugs. The problem is they nerfed him way too much, they just should've left what they did in GU rather than adjusting its difficulty and add some elements that Iceborne Rajang has.

He has the double tail swipe and double tail slam ONLY in High Rank.
Rajang in GU was ONLY G rank and in IB, he was ONLY in Master Rank.
Master/G rank is where they will top off their movesets
What the hell are they gonna do in G-Rank anyway? Make him faster?
Monsters in Rise look like punching bags for us hunters to abuse.
Rajang should've been in G rank in rise in my opinion, but it is what it is, Rajang is quite special in my opinion, he should be that ape who stonks and bonks people.
Edit: High Rank is not much of an excuse to make a Monster easy, I would say Narcaguga like you said in your example, should be nerfed in its moveset but balance it as Rajang failed to do so. Rajang's moves are too slow compared to the nature of the game, therefore making a ton of openings and not having a counter against wirebugs though you could argue with that.
Battlefield, fallout, elder scroll, total war, halo, dark souls you named them all, they also have divided groups inside their community, some of them are kinda extreme as well..
Heck another example i found back then is a certain group of people that despise the witcher 3 so bad and defend the witcher 1 & 2 to their last breath..
That's why the best thing to do is just ignore them and enjoy the game you like..
They're nerfed to an extent, but show their true potential in the next level, just like how Deviljho doesn't appear in low rank, has only a high rank, then becomes savage jho in g/master rank.
Their movesets will compromise to their according rank
I remember how much hate it received, glad that franchise turned out fine, but i bet there are still people out that can't accept it as Mario game..
