Ideally you want to create a build for each element which can take some time but that's the ideal scenario. While youre progressing through the story this isn't important though so just pick an element that is strong against a lot of different monsters. Thunder is a great choice as a lot of monsters in Iceborne resist ice damage and fire has never been broadly useful.

Try to aim for MR Anjanath and Glavenous first if you want fire. I believe I still had Odogo's chainblades coming from HR.
The listed raw damage of Dual Blades is bloated by 1.4x and all element damage is bloated by 10x. So the difference is not that large. Regardless because of the way elemental damage is applied and how monster resistances work, and the attack speed of dual blades, you still want to use the element matching the monster's weakness.
