If you're just trying to constantly use the clutch claw nonstop regardless of the monster's state, then yeah I could see how that would be frustrating.
Additionally, I feel like some of the endgame monsters had more thought put into their interactions with the mechanic and tend to give more openings to safely use it.

Don't do that. You're meant to look for an opening, when the monster stops attacking, and you got enough time to at least get a slap in. As mentioned above, Rocksteady or Temporal mantels (mostly) prevent knock-offs, letting you wallbang at will.
Otherwise, you have to choose when to do so carefully.
