I personally use dragon element DB(i use his weapon) with 2 set velkana and 3 set safijiva and it just dumps elemental dmg on him.
If you have beaten it before, theres event quests that swap between alatreon starting in fire or ice mode. So you'll either want to bring ice element when it starts in fire, or vice versa.
Or you can bring dragon element to deal slightly less, but much more consistent elemental damage throughout the fight.
Avoid water and thunder no matter what.

But if you can just focus on dealing enough elemental dmg to prevent the supernova from instakilling you its alot easier.
Ice is super effective when he's in fire form and fire is super effective when he's in ice form.
During the special assignment he always starts in fire form so ice would be your best bet, but keep in mind that you have to break the horns as otherwise you can no longer weaken the second Escaton Judgement.
Dragon element is always effective and becomes super effective when he switches to dragon mode. It's the safest option as you don't have to break the horns in order to weaken the nova.
Ironically the best dragon element weapons are Alatreon's weapons, but you can obtain these without actually defeating him. You can use the plunderblade to gather a few materials and then use those to craft the weapons. The Kjarr dragon weapons are also an alternative and the Kjarr weapons in general are the best choice for every elemental damage type except dragon for most weapon types.
Make sure that you have prepared an elemental set to deal a lot of elemental damage to him to weaken the Escaton Judgement. This can be achieved by equipping the Safi armor and using decorations to buff the elemental attack of the weapon that youre using. With the proper build you can weaken his Escaton Judgement almost instantly.
Equipping blight resistance 3 is really helpful as well and as usual health boost 3 is mandatory.

Its really not a big thing long as you are meeting the element damage check to power it down.
1. Fire and Ice: The strongest verse the opposite mode, but will do 0 elemental damage to itself. This means it is very high risk, high reward. To use these effectively you must break Alatreons horns during his Dragon mode so he does not switch to the other element. Failure to break the horns will likely result in your death. Note: Horns can only be broke twice, so after the 3rd Escaton Judgement he will switch, and you need to kill him before the 4th EJ.
2. Thunder and Water: These are intermediate elements. They will always work but Alatreons elemental hitzones change depending on mode. If you use these you do not need to break the horns, but doing so is strongly recommended if you can as the hitzones will get worse if he switches. These elements are for when you are uncertain if you can break the horns or not.
3. Dragon: Dragon is considered the worse element for Alatreon. It always works, but has trash elemental hitzones for Fire and Ice mode, and only moderate hitzones for Dragon mode. Breaking the horns is irrelevant for Dragon element.
To summarize:
Fire Mode Start: Use Ice (and Break Horns), or Water (if uncertain about getting Horn Break).
Ice Mode Start: Use Fire (and Break Horns), or Thunder (if uncertain about getting Horn Break).
Use Dragon if you want to turn your brain off, and probably fail.
if your solo its best to make your first attempt with the element he is weakest to for the fight and practice getting that elemental flinch and horn break each round. then its all about trying to kill him before he gets a 3rd judgement off (horns break twice.) though typically if your getting an elemental flinch each judgement solo your doing good and should be able to end the fight fairly easily.

The only element he will always change into is dragon element.
If you break the horns and he started in fire form then he will remain in fire form after the escaton judgement. When he starts in ice form this applies as well.
You can always opt to use a neutral element so you can always weaken the escaton judgement such as dragon, thunder or water. If you use these you don't have to break the horns as you can always weaken the escaton judgement.
