The more purple sharpness you have, the easier for you to maintain this boost to damage. As pointed out by Big ROCK, you need the 2 Sharpness V to even get 20 hits of purple.
If you are not confident about maintaining the purple sharpness via Master's Touch (by always hitting tenderised weak spots for the +50 affinity or always hitting weak spots for the +30 affinity, whichever gets you to 100 affinity) then you are actually better off not using Master's Touch because the Safi weapon actually got 120 hits of white sharpness (with 2 sharpness V or 90 with 1 sharpness V) which is way more than enough for all fights except a few in arena-type locations but even then, you will only likely sharpen once mid-battle.
So, if you drop the sharpness to the point where there is no purple or so little purple that you can't maintain it, you are essentially rendering your Master's Touch pointless because 90 or 120 white needs no sharpening mid-battle majority of the time and if you can't maintain the purple sharpness then you are just using white sharpness.
In that case, to OP, if you don't at least have 2 Sharpness V, you are better off not using Master's Touch because even 90 hits of white is plentiful for most battles.
Also, with Whetfish Fin+, it reduces the impact of sharpening downtime even more.
What *does* matter is sharpness management, and the 2 sharpness upgrades will give you a massive amount of white sharpness. So even if you drop below purple you'll still be doing decent damage. You really want to avoid blue at all costs.
So personally I'd recommend keeping the 2 sharpness upgrades on there.
