Texture Quality "Full" differences
I've been running textures at 1024 for most of the time and have had a very smooth experience at 1080p with 6GB of VRAM on my card. I noticed that with Full textures, it shows that VRAM usage would go from 2GB to 4GB. Do these textures have any noticeable differences in how they look? I don't want to over work my machine.

Most people say they dont notice a huge difference, it's more of when youre up close to something do you see the difference

My personal exp using the high res textures is that it not only improved my graphics but also made my game run better (more FPS, smoother gameplay etc...) But that's just my experience.

Feel free to crank your texture quality up. The only way it would overwork anything is if you were overloading your vram and the system had to keep caching textures to system ram.

Even then, all that would do is possible loading stutter as the assets stream.

I find it very noticeable even on 1080p, especially on armor and things like the canteen or the forge but it also increases the loading times by a lot on HDDs. As long as you have an SSD and enough VRAM to spare there's no reason not to at least try it out. Don't worry about "overworking" your system, if your VRAM gets exceeded the game will just start stuttering and maybe crash and then you can simply reset the setting.
From 1024 to full the difference is noticeable only when you're standing still, go up to the hub and look at the horn near the counter, you'll be able to spot a tiny difference. Even with the high res dlc the difference is just not worth the space it takes, it's better to run a reshade and lose 5-10fps for a better looking game.
