How different is the gameplay from The Witcher?
Actually closer than you would expect. Gameplay wise this is pretty much superior to TW3 in almost all aspects, mostly because MH is a gameplay focused game while TW is a story focused one.
Also, unlocking Geralt's ♥♥♥♥ is kind of an end game thing, so if you were hoping to play the entire game that way you might be dissapointed, but then again mods exist. Also for Iceborne you can play as Geralt the whole way I'm assuming.

If you ask if you can play like geralt for all the time, the answer is no. There is no similarity between the combat system and story line of MHW and Witcher at all.
Is the gameplay more similar to Final Fantasy XV?
No. There is almost no minion hunts. You don’t need to travel a lot and since MHW is not open world so it’s quite different. The combat system is also completely different. You can check out some MHW gameplay videos to see if you like it.

Ever played Phantasy Star Online/Universe? Or a more recent type of that type of game like Warframe? It is that kind of gameplay. Start in a hub, go to a board/counter/place to get quests, accept quests and get teleported to a linear area to grind out the quest requirements, grind the same quests until you have weapons and armor to grind the next quest, and so on. All of this with the theme of you being a monster hunter tracking monsters to kill/catch them.
Sounds boring, but it's not really because the combat is great, and there are neat fight mechanics and several different types of weapons that each feel different. And the weapons have a weighty feel to them, so the combat physics feel wonderful.
