Solo'ing Alatreon? Eat for Felyne Safeguard.

If you have all six "Preparation" canteen ingredients (Brew ingredients marked with a red stamp) the Canteen will offer the "Open Road Platter" - A meal that has a chance to activate the "Felyne Safeguard" food skill, preventing the penalty of the first party member that carts. In essence this will give you one additional cart before failing any quest guaranteed in exchange for a Voucher/ Gourmet Voucher.

For those of you solo players who've made the decision to take the cart from Alatreon's Escaton Judgement rather than bending to Capcom's will and grinding out an elemental build for one monsters gimmick - This may just be the edge you need.

Using a Master's Touch + 3pc Safi' & Safi' blast Insect Glaive build I killed Alatreon in ~20 minutes, 11 seconds. With Fortify active, the damage taken starts to ease up a bit after the first and second EJ you eat. I killed him shortly after returning from eating my third EJ, despite not having fought him with IG prior and was getting hit a lot during the fight.

You will still have to be able to consistently deal damage and avoid taking as much damage as possible however, as you're effectively sacrificing all four carts to fight Alatreon as long as possible before Escaton Judgement #4. But if you can keep up the damage before then you'll come away with a win.
