Tips for dealing with flying monsters?
I'm still pretty new to Iceborne and one change I really don't like is how much more irritating every flying monster has been made. Flash Pods work once before they do literally nothing, and where in the base game flying was never too much of a problem, in Iceborne flying monsters can stay in the air for 75% of the hunt, easily. Using melee weapons it can be nigh impossible to hit them, let alone do enough damage to knock them back down.

Does anyone have any tips? I'm getting a little bored of standing around waiting for some Paolumu to stop space-hopping around.

1) enemies are only immune to flash pod temporarily
2) switch to range weapon
3) trap
4) status like para and sleep, sleeping will reset their enraged state. So you can flinch shot them into wall 2 times > make them angry > make them sleep > flinch shot them 2 times again
5) more dps for more staggering > which will make them get exhausted faster

Switch to bowguns and just shoot them.

There are some preparations i make before going against someone who flies too much

First you can get two free drops by using Sleep knives or other types of knives as your slinger ammo, triggering sleep or paralysis drops the monster.
Second Flinch shoot them, If they are enraged and you have used all your knives then try clutch claw attacking them until they finally drop, and of course as you mentioned you get a free drop from using flashpods too.

If all else fails consider practicing a new weapon for flying monsters, as IG/Gunlance user i find flying monsters pretty killable, for gunlance i switch to a long shelling gunlance and for IG you got access to Aerial attacks pretty much all the time.

Cliffs or ledges are friends to hammer, GS, SnS, SA or GL vs flying monsters. SA and CB in particular can reach them. Longsword too, but their upslash attack is piss weak compared to swagaxe.
Hammer in particular would even do with a slope.
Or, go insect glaive and show the flying monster what it really means to fly.

If you don't like weapons with some vertical attacks or decent mount ability, bowguns or bow.
Xiwen accurately covered other techniques. Flash pod resistance wears off overtime, just don't spam it.
Most flying monsters stay pretty low to the ground, and the majority of weapons have attacks that can reach them.
You can still manage to get hits off on their tail (rath, legi) or their head (pao).
I think some monsters fall down if you shoot slinger ammo at them (I remember a couple elder dragons falling out of the sky to dragon pods, but that was probably thanks to elderseal..idk)
Sometimes if you break their wings they'll also stay on the ground longer; and I know for a fact the raths stumble at some points if they try to fly with broken wings.
I think paolumu also gets knocked to the ground if you hit it's head enough while it's flying (or it'll deflate or something, honestly don't remember)
Also, legiana is super weak to poison.

if all else fails, you can always spam traps :)
