The stability of your connection will depend on you own connection and the Steam servers.
Make sure that youre not playing on a wireless connection and that your PC is connected with a cable. Wireless connections are extremely unreliable and should never be used for online gaming unless there are no other options available. They tend to disconnect quite frequently due to the nature of this connection type.
Once you have a wired connection it's also important to monitor it's stability. Fluctations in upload and download speed can cause disconnects or lag to occur. This can easily be verfied through a monitoring programme.
Some router settings can block certain connections so make sure that youre not on a strict NAT type. Type 3 means that you have a strict NAT type and this can cause issues in a lot of online games. Port forwarding is the solution to this problem and a lot of tutorials on how to do this can be found on the internet, which could probably explain it a lot better then I can.
Mods can also cause connection issues if theyre not installed correctly or outdated. The best solution to this issue would be to just avoid them altogether as theyre not officially supported and they can cause all sorts of nasty issues which can't always be solved. Use them at your own risk.
Some people mentioned disconnecting issues in this game, but I think that most of these claims can be traced back to one of the aforementioned causes. The game had a lot of issues with facilitating it's online componoments when it launched, but these issues have been solved a long time ago. I've rarely experienced disconnects and they only occur when I'm not hosting the session myself, which could point to an instability on the host's side.
As long as your own connection is stable there shouldn't be any problems with Monster Hunter World in my opinion.
It's Capcom as a whole, man. Anyone else here play Street Fighter 5 on Steam and see that patch a fan made to the netcode in like... 2 days? It totally fixed almost every latency and teleporting problem that occurred on the standard netcode. A fan made it in what amounts to a weekend... Seriously, give this a read-

Capcom never addressed the issue for years, just like this Monster Hunter ♥♥♥♥. The end result may have had some issues, but that patch was working. The creator was already talking about writing the same fix for PS4, so everyone could enjoy the game without game breaking issues, for free. But Capcom had the 2020 Esports inclusion of the olympics, and god forbid their baby was being tinkered with to make it functional. So they released a patch of their own that only included a check run, to make the game non-playable if the fan patch was present.
Tl;dr:
Capcom is aware of the connection problem, but they will never actually fix it. It's partially because they don't even know how to.
Issue is, capcom has no power over Steam peer to peer connection
However, if the issue truly lies in Steam P2P connection, why is the exact same problem happening on both platforms, when Steam is built on different software and is more equipped for online play?
Most ppl complain on steam so I just assumed u played on PC only, just bringing in PS4 to justify the cause of bad PC connections
Capcom needs to work with Sony, Steam/Valve, and Microsoft to work on the servers but in the end, itll depend on the companies whether or not they want to help the games thriving
