I recommend the Luna/Gold Rath build. Head, arms and legs of the Luna beta armour, combined with gold rathian chest and waist (both beta). Gives you two level 5 defensive skills (divine blessing and tool specialist) and a massive abundance of slots to play with. It really lets you get creative with whatever.

I generally used it with health booster. Having the ability to put down a booster every minute is very handy and is a fantastic support asset.

I got a DB with 3 set bonuses.....Gold Rathian,Nergigante and Vaal.....Yeah i was bored.....it works nice.....can't die with super recovery deco on it....Made another build from Insect Glaive with Velkana and Namielle set boonuses.....2 Velkana pieces and 3 Namiele pieces with Safi weapon with augment.
Im trying stuff......Im looking now for Long Sword with Barrioth set and teostra...will see....Yes i'm bored.

3 piece Safi + 3 piece Teo (Safi weapon with Teo skill on it), it's pretty amusing.
Pretty hard to die, hardly need to sharpen, works with resentment.
I'm actually not sure I'll bother switching from it to the Raging Brachy variants.

Try an Earplugs + Divine Blessing Secret + Zero Sum Discharge Switch Axe build. Quite fun. lol

Super Recovery + Heal Kinsect and stacking damage on the Glaive's jump attacks has been a lot of fun. Super Recovery heals you up back to full and keeps Peak Performance procced since ideally you'll be bouncing around avoiding damage anyway, and regularly seeing big numbers every time you land a hit is pretty great.

I'm not sure how good it is in iceborne, but KO/slugger hammer builds were fun for me. Also wide range HH or SnS

Maybe try a tanky Lance set with the MR vaal gear. I've seen videos too of palico builds, or kinsect spam builds.

You could try an evasive hunting horn build. I have one that gets evade window 5 and evade extender 3, and it's great practice for dodging. It lets you do things that would normally be a very bad idea, like rolling through a teostra nova.

Safi'jiiva allows for more set bonuses, which is arguably more fun.

does a Frostcraft SnS count as off meta? although i'm using Safis SnS with Velkhana essence (just give it more wiggly room for Armor)

If you mean very meme builds that still are (kinda) effective:

Sleep SA with exhaust is nice. Or full para.

Gunlance: No magazine/sharp deco's, lvl 5 artillery + maintance + earplugs & ghilly mantel = Spam wyvernfire. If you think you'll be doing to few damage, you can equip some meowster jewels. Pls don't use it in multiplayer dough.

Or just run around with the KFC nugget hammer.
