Why do almost none of the brute wyverns have wings? Why do some bird wyverns not have wings? Why do some of the fanged wyverns not have fangs? Why are there FLYING WYVERNS when, since wyverns should always have wings, they should fly by default?

clearly, the word doesn't just mean that it has two legs and wings for arms or whatever. "Wyvern" just seems to be a blanket term for most large monsters.

Same thing for "Elder Dragon". The vocabulary is simply being used differently than what you would use it for. In this case, the word "Dragon" is being used more loosely. It is also explained that the title is used for creatures who cannot be put into any other classification, and live outside any other known ecosystem.

Things that are also Elder Dragons:
-Flying octopus
-Big lizard
-Big snake
-Sand whales
-Water whales
-Bone cuttlefish
-Gold lizard
-Lava turtle

Even Kirin looks like a horse, It actually also half dragon according to mythology. I dunno about the others but I think Kirin is the only monster in monster hutner that its name and design based on mythology.

Well you see elder dragons are not really dragons its just creatures with supernatural capabilities such as kirin being able to summon lighting out of nowhere kushala tornados Nergigante with his regeneration xenojiva with his immense dragon energy ect.

Because "Elder Dragon" is a classification of monsters in MH universe, which includes ALL of the monsters that are ANOMALIES and often hold power over elements, which both suit Kirin perfectly, he is an anomaly unlike any other monster and directly control force of nature, storm and lightning in his case.

To put it simply "Eldar Dragon" is more of a title rather than a biology term.
They call it a dragon because it does stuff researchers can't understand and is very powerful - lightning from outta nowhere, people have no idea how it breeds, how it lives or anything really. Most knowledge about it are speculations by game lore.

Also Kirin is far from the weirdest thing to be called an Elder Dragon (video related).

Wyverns on the other hand are just a capcom's quirk. Don't think too hard about it, it doesn't make more sense than it sounds.

Elder Dragons are not necessarily a species; rather there are many types of species that "qualify" as an elder dragon. It's sort of a catch-all term for abnormally strong and destructive monsters.

Kirin looks like a horse, can still be an "elder dragon".
It's not a MHW thing, Kirin is a mythological creature in real-life lore. It's often referenced in anime, songs, art, ect from Japan.

Hell, Sasuke from "Naruto" even has a finisher move named after Kirin - and that's probably where a lot of non-Japanese learned of the Kirin, probably without realizing it.

Dragon with wings are mostly European.... The dragon in asia are, for the vast majority, wingless.
