You can theoretically fight Rathian, Rathalos, or Diablos sooner, but they are all considerably harder than Paolumu, especially Diablos, and are not meant to be hunted until later.
I had a Rathian quest before going for the Paolumu.
Both easy with the IG. :)
I hope they'll release my favorite monster, Malfestio, at a later point.
It's right on Coral map, after doing that Gianta Magma Godzilla quest.
Don't rush, be patient. I suggest grinding on barroth, kadachi and anja for good armors. Jurya, Kadachi and Anja also give good ingredients for weapons, as pukei pukei.
After Rotten Vale and Coral map you'll get a lot of flying wyverns on both investigations and optionals. Raths, Legiana, Paoluma, (the fluffy bat), and others are easy to kill.
I actually found Rathalos to be the easiest, followed by Rathian and then Diablos - mostly because of the constant stun that the latter two inflict.
I found your post because I too was worried about progressing fast enough to access the limited bounties and especially the limited event missions, but here's the take-away from my research: don't worry too much about it. The limited bounties especially are just weekly bounties. As soon as they go away they'll be replaced by another set. It's similar to rotating optional objectives in many "lifestyle" or "investment" games. For example, Destiny's bounties and The Division's weekly high-value targets are similar, and no one worries if they don't get around to those because there are always more in time. The limited bounties in MHW do give some useful things, but they're items that you'll likely be swimming in over the course of your time with the game as the weeks and months roll on. So don't rush your initial experience just to get these done.
From the fact that you're asking about flying wyverns specifically, I think you are worried about the third limited bounty this week, but there are also limited event missions that expire at the same time. (You can check a schedule of these on the official MHW site.) I care about this a bit more, but I think I'm unlikely to reach HR 6 and be able to do the "Ya-Ku With That" event in time. Again, I think we shouldn't worry. If you look into the event schedule for PS4 you'll find that this mission has come back around again every month or so. It doesn't seem to reward anything but money; it's just a cool fight, and you'll get to experience it next time it shows up. So take your time and don't stress!
Bring Antidotes and and a Lightnining weapon. Watch out for her tail and it should be easy.
You will find her in area 2 or 3 regularly. And should have seen her during that escort quest.
She shares a spawn with Diablos I believe so wont always be present on expeditions.

Alternatively you can wait till you unlock the 3rd area and then get the quest Royal Relocation from the Botanist in the Teade area of Asteris. This garantuees that she spawns.
Or push a little further with the main quests and get Poaloma
