Mounting works like a status buildup with more resistances being added the more often it triggers.
The first aerial hit will pretty much always mount, then you need around 2 hits to mount, then more up until a cap so just keep jump attacking and eventually, you'll trigger it.
There wre "fun" builds on console that use Palico as main DPS. They focused on support and mushromancer perks. They were not fastest ones when it comes to kills though.
But as above said, only way to trigger is by spamming. No more consistent mounting.
Only weapons that allows you to jump and do aerial attacks from anywhere. Keep in mind though that mounting is a random chance based on their mounting resistance every time you strike a monster from above, and every time you succesfully mount a big monster their mounting resistance increases.
