How to remove items from the item bar?
updated with slight workarounds:

As stated in the Answer, dedicate an entire radial menu to whetstones to avoid an accidental item use in combat (im looking at you BBQ).

also, this for fixing your item bar (still cannot remove some items)

There is absolutetly no reason for me to have non-combat items on my item bar when I am in combat.
Best part is that the BBQ spit, is right next to the whetstone, my most often used item. It locks you into an animation that usually means KO if selected during a fight.

From what i can see ingame, i can only edit my radial menu.

You can re-order the item bar to match your inventory. This is done in the item menu look at the short cuts under the box.

You cannot however remove the 4 special non-combat items as far as I am aware.

Perosnally I just set my radial menu as all wetstone and then use the item bar for items, makes it very easy to sharpen.

Not a bad idea with the entirely whetstone radial menu. I like how we have to do messed up stuff like this just to get around the games horrendous UI design.

This helps with moving stuff around, but you are still required to keep useless items on the bar.

You can set the radial to toggle use. At least on gamepad.

Like, in order to use the item, you click the thumbs tick once you select it to actually use it.

I will just stick with using one of my 2 item radials for nothing but whetstones. One less step between me and shooty/stabby.

The ideal situation for me would be to have an item bar with Zero non combat items, and then dedicate one of my radials for non combat instead.

I find using radial menus in combat to be anti fun, and likely to be the work of the devil.

If you are playing on keyboard This will help you out a lot. Having The F keys rebound to the scroll wheel/click also is very helpful.

How do you even get an accidental item use from the radial menu? Are you using a controller with release to use? Switch to press R3 to use, works way better.

Personally I have one radial with consumables (and whetstones), one with tools (slinger ammo, mantle, traps), and one to craft more consumables/tools.

Because item selection is based on the use of an analog stick, and not a key, being a single degree off results in selecting the wrong item. Basically the same reason why m/kb is preferred over controller for anything first person, it is clumsy.

Though, to be fair, i do prefer controller for the 3rd person melee combat in this game.

I found out how and wanted to help some other people with this,

In the item pouch menu if you hover over the fixed items you can remove them with N at least on PC I don't know what key it is on consoles.
