Also, your weapons and armor are likely not at their greatest potential. Once you get properly geared again, and you've adapted to the new moves the monsters and yourself have available, your hunt times will drop significantly again.
BUT you also have to take into account that we are in early Iceborne content. It's like when Nergigante Beta HR armor was the best you could get back in early Vanilla content. Only further releaed content like Gamma Armor made you strong enough to get the fast kill times in HR. I think it will be the same in Iceborne with further Gear like Safi'Jica weapons and further content updates.
By 2-Star MR quests, I don't think any monster has less health than Xeno.
Also they probably do have higher defence and health because that Xeno is a High Rank monster. A Master Rank Teo has a lot higher attack, defence and health than a High Rank Teo for example ^^
If your using Kulve weapons you may need to replace them with some master rank weapons instead. Also I think clutch claw weapon attacks a lot eat of your sharpness for some weapons so you may need to sharpen your weapon more :)
Right now I'm using Chrome Halberd, because I saw Level 4 Normal Shelling and was like, hell yeah I'm getting in on that!
