Here you go buddy. Not a lot of people actually knows about the heart beat monitor. It's a pretty clever mechanic. Otherwise your screen would be flooded with health bars.
Well, it's not a correct science, but it DOES go flat more frequently and for longer times as their health declines. Sorry to tell you, but since I had a bug that bars me from seeing the skulls when helping my friends, heartrate has been a reliable tell for when to capture. The flashing orange is another tell that it's enraged.

First one is called Souvenir’s Light Pillar (https://www.nexusmods.com/monsterhunterworld/mods/112?tab=description), which simply puts a light pillar on all loot on the ground and colors it to what kind of loot it is for (slinger, selling, monster parts). Pretty handy.
Second one is SmartHunter (https://www.nexusmods.com/monsterhunterworld/mods/793?tab=description), it has a lot of things going on. Some notable things are a widget for the monster, your team and yourself. Each widget is customizable to what information is displayed (so if you don’t want Monster HP, build-up, or DPS meters you can edit the .json to exclude those things, instructions on how to do that are included) to make it more tailored to your playing preference.
Third is Monster 3 Star Weakness Icon Indicator (https://www.nexusmods.com/monsterhunterworld/mods/258?tab=description), this just puts a handy icon on each Monsters portrait that lets you know what their elemental weakness is, so you don’t have to always go into your Hunters Notebook and look it up.
There are a few other notable mentions, like the quest mod, which allows for the player to always have up all the event quests, but there are some weird quirks with that one, like KT will crash if launched from Events and not from the Hub KT, and is dependent on another mod (needs 2 to work) but that will be noted in the description, and its only for MH/HR hunts. The other notable is called an overlay that shows lots of stuff, and it literally shows EVERYTHING (with name plates) in the game as you venture around, it is also customizable via its .json.

Thats all there is to that.
The Orange Color is basically when they are enraged. It's useful, because not all monsters have visual cues on their rage state. Like Anjanath and Fulgur having the Head Fin reveal. Puki-Puki turning a different shade of colors. Nargacouga's eyes glowing and leaving trails. Bazelgeuse, deviljo, and Odogaron's blood boiling red. Tobi Kadochi and Viper Kadochi's ffur standing up.
The trick to reading the health bar is to study it for the average beat. As it mixes peaks with states of exhaustion or different hp states.
I don't really like having an HP Bar mod in this game (I can usually tell how weak the monster is just by its tells and the visual damage it has) but these are two of the better mods for Monster HP. Wish that more User Interface mods fit the aesthetic of the game more, but that's a bit more effort than anyone wants to do at the moment.
Well, as long as they go exhausted so much more often when they're on low health that it becomes a reliable tell it works the same for me.
