They vary depending on the generation. I'm sure there's a wiki that will detail all of it.

For the most part, there is always a city that is in danger of being destroyed by some monster. You have to fight your way to defeat that monster and then you realize that was not the actual threat. Keep fighting til the elder dragons and unlock high rank. After defeating the elder dragons, roll credits and "congratulations, you beat the game." Then G rank begins...

In Tri and 3 Ultimate (3U), you were in a fishing village. The village elder always offered you words of wisdom and reminisced about his years as a hunter, "when I was your age, I'd have killed that barroth with one arm tied behind my back." His son ran the research division collecting trade-in quests and issuing them on behalf of the villagers. He always wished he could be a hunter, imagining how amazing he would be, "too bad I'm stuck in town here." But, we all knew he wouldn't last 10 minutes with a great jaggi. The fishmonger would send out a fleet of ships (3 at end game) to gather stuff for you (ala tailraiders), and the argosy captain was a samurai from a strange foreign land (probably japan).

In 4U, the guildmarm took the place of the village elder. She had a fetish for monsters and just couldn't wait to be smashed by a brachydios. She was arguably the best character in the series, "ooh, tell me about how 'big' he was..." There was also a group of A-listers, each with personalities reflecting their weapon choices and the "Ace Cadet" who couldn't settle on a weapon. They were bad-asses in their own right, which made you feel so accomplished when you took on challenges after they had already failed. "They probably loosened the jar for you." Aside from that, there were "apex" monsters who would always make your weapon bounce (even with mind's eye... er... no bounce skill). You had to use a special gadget for a 60 second window where you could avoid bouncing, and had to get all your hits in in small bursts. This was a terrible mechanic.

In generations, they just revisited the villages and characters from the other games. It was very "story lite." But, the village elders and most of the main characters were represented. They also brought back a huge volume of monsters from older generations, so the roster was something like 75 in the version that didn't even include G rank.

That's all I got...
