Stun comes from getting hit consecutive times. Nothing to do with the monster's skills unless it's thunderblight, which makes you more susceptible to getting stun.

just try to dodge sideways maybe.. then stay near his shoulders/front legs and you should be able to deal with him easier as most his fire attacks shouldn't reach you. you can do it, dude!
