Palicoes from other players will have higher stats compared to the defaults that the game gives you. Later on you'll unlock higher rank safaris too
Then they come back after five quest completions (and fails maybe, too) and you report back, and get the random pieces of materials they collected. It's usually the lowest tier stuff possible, but it's nice all the same - you won't be getting Thundertails or Thunderhorns from Kirin, just some Kirin Hide+ and such.
They can be in any zone you've unlocked, plus Low Rank or High Rank, which unlocks as you progress through the game.
They are an excellent way to acquire some of the more annoying resources, such as bug carves, Mosswine hides or Wingdrake Hides+ from Barnos etc.
If you have Guild Cards, their Palico will appear in the Safari zone on the Research Base, and will also be random flavour text for who you send on the safari itself - if you don't have any Guild Cards, you'll just get randomly named Palicos and Grimalkyne instead.
You had Hunting (killing small monsters and large monsters)
You had Gathering (collecting herbs, minerals and bones)
You had Research (I have no idea what this does, I just ignore it entirely)
I don't think you can increase an individual Palico's stats, for your friends, but I'm going to assume your Palico level will increase the stats they give over time - a Level 30 Palico likely is maxed in everything, for example.
I tend to favour picking the highest Hunting skill group, although eventually all three skills will be maxed out, and then I pick a RED RED RED RED RED Route, ignoring Gathering entirely except when it appears near something else that's decent - annoying monsters like Diablos, Lavasioth etc.
Sometimes you'll see little icons above the the individual targets of a route, and a little red paw, bouncing up and down. This means on that day, the local Grimalkynes will help with that target to increase the rewards.
The number of stars over a day means how difficult the day in question is - usually tied to the quality of what you'll be recieving as well. I tend to ignore the stars though, since usually what I want is 5 stars anyway.
Two unique things you can get from the Tailraider Safari is Sinister Cloth and Tailraider Vouchers, both used for making unique interesting armour.

Happy Hunting!
Evil_apai, Eleventh Doctor, thanks for telling that I should have the guild card. Time to send mine to everyone!
Greb, your tuto is perfect, too bad you don't know about research because I'm wondering the same. Probably have something to do with the bestiaire and such. Anyway, thanks a, lot and happy hunting too!
