When he enrages, Attack his heart/belly part to trigger his dash attack animation. Attacking him at the middle of that attack animation will topple him down and you're free to wreck his head for a long period of time.

This is also true for Rathian/Rathalos Family when they do the fire breath air boost attack and you hit their chest or head part, you'll knock them down.

Not every weapon is created equally for every monster. You might wreck Kirin by pummeling his only weakspot, the head, with Hammers and Hunting Horns, and then really suffer against something like Vaal Hazak who keeps his head held really high.

If you're having trouble hitting their head or their tail, consider using a ranged weapon or weapon with significant reach like a longsword or a lance. Variety is the spice of life, don't be that guy who has 1000+ uses of a single weapon and nothing else, or that guy who keeps throwing himself at a brick wall until it breaks down.

I know a hammer main guy who kills Vaal Hazak in 2 minutes and Jho in sub 2 minutes. While what you say is true, there's always a way to kill everything fast using every weapon. The sweetspot is the 5minute mark. Not all weapons are created equal for different enemies, but soloing, you can almost guarantee that all weapon can kill anything in less than 5 minutes.

If I'm gonna advice something though, It's usually that people just need to be more aware of the capabilities of their weapon on different terrain, situations, and monsters. Sometimes, switching to a different element alone makes a huge difference too.

Tempered Daora is basically "try to figure out how your melee teammates will pass their time once they realize they shouldn't have spammed that many flash pods in the first two minutes of the hunt".
