Because the default camera sucks balls.

Veterans like to use the target camera, basically it's a free camera and only targets the monster with the press of the button, it's pretty handy.
Most people who play this game effectively does not use any sort of lock on. Because you really should not. The monsters move fast and thats how the game is designed. Lock on wont do you any favors. Target camera can be useful if you completely lose sight of the monsters, but if that happens just use your ears. Keep your thumbs on the sticks, keep your eyes on the target, and hit it where it hurts.
Personally, I'd like an option to disable the target thing entirely and make L1 *immediately* pull up the radial menu rather than having a half-second delay on it. I fumble page-switching all the damn time because I press the d-button too soon.
