How to play offline?

If I'm not mistaken, when creating a session, it used to have a "yes" option to play alone. Did they remove it?

I don't believe that was ever an explicit option. If you are online and create a private session then no one can join unless you give them the session ID. If you set Steam to offline then you will be 100% alone. Both work.

yes you are now essentially forced online, unless you play the game in steam offline mode. you can create an online session that only allows friends to join - so if you dont have friends, then no else can join you anyways

Only caveat for playing MHW in offline mode is that you wont be able to access the Event quests. Assigned, Optional, Investigation, and Special Assignment quests can still be accessed however.

Every time you make an online lobby it generates a string of numbers and letters which serve as the ID. You can post that ID and other people can directly join your lobby. If your lobby is public than anyone can join, otherwise they need the ID to get access.
