Try and cut her tail off, as it deals poison.
You can't do much about weapons and armour, and the fight will be hard. Take your time, don't get too kill hungry. It's better to dodge and deal no damage than deal damage and take a hit.
For example, if you have a sharp weapon, like the longsword, you should focus on her tail, because that's where the poison comes from.
You should also try to equip a weapon with the right element, for Rathian this would be "Dragon".
Don't forget to bring enough items with you on the hunt. You should have atleast full stacks of Potion, Mega potion and antidote, then you should also take full stacks of honey, herbs and antidote herbs.
Although I seldom use them, you could also take flash pods with you, to bring her to the ground when she's flying.
For the fight itself, you should try to be as close to her as possible, because if you are far away, she will fire her tripple fireball which can oneshot you if your armor is not that good.
Learn her moveset, because only then will you be able to reliable evade her attacks.
At last, choose armor and decorations that are good against fire and poison, because she uses alot of both.
Weapons that have a bone relic tree will have access to the dragon element.
If you're gonna switch to a new weapon Bone or Alloy are good choices as you'll gradually gain the components to upgrade over time regardless of what you're hunting for the most part.
I only know how to break body parts but I've never cut off a tail before,i tried using blade weapons like the dual blades and long sword,but I can't seem to do it,glaives too.
I doesn't takt that many hits to cut off the tail of a LR Monster, so don't worry, just keep hitting it.
If you really struggle that much with a monster, try to do some optional quest to farm ressources for better equipment.
You could also build specialised armor to counter the monster you are struggling with.
For example, I really struggled with Kirin, so I crafted a full Azure Rathalos set and equipped it with the neccessary decorations, to counter it's anoying lightning strikes.
So, think about what k.o.'s you the most in your fight with Pink Rathian and choose your armor accordingly. If you die by her fire most of the time, choose an armor set with high defense against fire, or if you mostly evade her fire balls, but die alot by her normal attacks (raw damage), then you should pick armor with higher defense and you can neglect the elemental defense.
Pink Rathian is HR though. And because the tail is her signature weapon it has a bit more HP than other tails.
That's the point of being a beginner. Things are hard. You know what's the only way to stop being a beginner? Play more and learn the game. There're no shortcuts.
First and foremost you should learn how to use your weapon properly. If you think you do know, then I will stop you right there because I am 100% sure you don't. I have played over a thousand hours accross this franchise and to this day there are things I could learn to be better at with just my main weapon. If you know what your weapon can and cannot do, it will be very easy to judge what you can and cannot do at any point in time, even against monsters you're fighting for the first time. Learning a weapon is KEY. Watch some speedruns and see what people do, try to imitate them.
Second most important thing is learning the Monster. Here's a simple guide to beating monsters if you get stuck on anything:
1. Leave your palico at home so the monster only targets you
2. Engage the monster and dodge it's attacks. At the begining just get out of the way and estimate where the hitboxes are. Try to look for patterns, monsters sometimes like to chain the same attacks together. For example: When rathan is enraged it will do two attacks in the air in a row instead of one.
3. Once you feel like you've seen all the attacks and know more or less how they work, start attacking the monster when you feel like you have a window.
4. It's okay to get greedy and see how much you can push it, you'll get hit. That's good, you need to get hit to be able to better judge the attack hitboxes and know what you can and cannot do when you see a window of opportunity. Ex: If you try to pull off a long combo and get hit by a follow up attack, you'll now know that you cannot do that long of a combo next time.
5. Once you feel like you have a good answer to every attack and know when you can attack and how deep can you go, then reset the fight and bring your palico. Congratulations, you now know how to beat a monster. 50 minutes is enough to kill anything, even if you're being horribly inefficient.

TFW I get reminded yellow sharpness exists. No wonder you couldn't beat pink rathian, that fight must've been bounce city. You REALLY need to get a better weapon, try to get some blue sharpness if you can, that's a 15% damage bonus compared to green, also less bouncing. Not sure if there are many weapins at this point that have meaningful levels of blue, but dear god at least go for green.
If I were you I'd stick with the basic iron tree, or some other basic monster tree that has good raw and decent sharpness levels (Jagras, Kulu, Tzitzi), it's going to make it easy for you to make regular upgrades and you won't have to worry about farming too many monsters until you "beat" the game. After you're done with main story, you can start thinking about optimizing your loadout.
Also, blackstseel weapons are bad for general use, stay away from them.
