Monster Hunter is a game about hunting monsters. You don't care about story, you're not there for dialogue, you're there because you want to bash big ass monsters on their heads with big ass weapons.
No, it's not MMO style ability spam and you will be punished for treating it like one. Each type of weapon has its own moveset that you have to learn. You cannot stop an animation of an attack so if you decided to use a slow big hit for a small opening then tough ♥♥♥♥ - you're getting pummeled for it. You learn your attacks, you learn how to position yourself around the monster, you learn effective tactics against monsters and you get your ass kicked untill you get good enough at fighting that monster so you would be the one kicking ass.

It's a review of an older game from the series but most of the points still stand.
You don't spam attacks and don't have abilities, your character doesn't progress, everything is tied to gear. It's closer to a Devil May Cry than a Witcher game because of how weapon combos work, but with much more weight and a greater focus on defense since everything can kill you really quickly.
Unlike the Witcher games, MHW is focused on grind, story is dumb and just there for the sake of being there. You hit stuff with hammer, make better hammer and armor and go hit stronger mob. That's the whole game right here.
You dont have lock on you have to manually aim all your attacks and different monster parts have different defenses and specific damage types or elements.
You do have evasion and doging and some weapons can block.
But I frames are way more strict in some games.
Also unlike witcher a single monster hunt can take anywhere between 10-30 minutes.
Depending on your gear.
In extreme casses it may event take 40+ mnutes or be as fast as 5.
Also 90% of the game is hunting large boss like monsters.
You will only ever hunt smaller enemies for some early level gear or if they swarm you as a mehanick of some of the larger monsters.
Ironically the Leshen from witcher 3 has this mehanick cranked up to 11.
