UI Scale?
So for some reason on the campaign map the left side of the screen is out of view except when I am in fullscreen. It's a massive pain in the ass.

I can't see the escort ships to build them except if i stretch the window and even then I only see a small portion of the box

I have a similar issue. The game UI only really seems to works with widescreen settings, so if you have a different screen ratio, don't be tricked by the video settings allowing for your screen resolution.
Pick the highest 15:9 resolution you can fully fit and play in windowed mode.
It looks bad, but it's a workaround, at least for me. :/

So what's a 15:9 resolution? I don't really know the deal with these ratios and what they mean. My desktop is 1600x1900 i believe so i like to have my games in a 1280x1024 so that I can have other stuff running on the other side of the screen.

I ment to say 16:9... In my roll-down menu I can select between 10 different resolutions. The bottom one is 1600x1200 (which is what I would like to use). The one above is 1600x900, and using that and fullscreen gives me a stretched screen, but where the UI fits.
That resolution in windowed mode leaves a fourth of my screen unused by the game, but the UI also fits.

I got a feeling the widescreen ones are busted to as I saw 16:10 reporting also busted UI. Guess there must have snuck in a bug in the rescaling code for the UI which makes the scaling only work for 16:9 monitors. As I can tell you my UI looks in tact on 2560x1440 and is not to small either.

well for some reason 1280 by 720 works perfectly now
