The usual suspect, your center of thrust is well below the center of mass causing upward rotation force, and nothing to correct it.
Also your tail is way too short, it can impart no pressure at all on the plane with how close to center of mass it is. I fixed it for now with some black magic, but planes are longer than they are wider for a reason.
Thanks ! I appreciate your fix (I find that little rudder haha), I will take your advise and lengthen the tail and move the exhaust up a bit.

In general, yes. There are a lot of calculations not taken into account by the game but that's a good general rule of thumb.
Exhaust (center of thrust) compared to the center of mass, yes.
