First of all, you can't change the game type once created.
To choose between creative or survival, It's an option in the new game menu.
Launch the game then click on new game.
On this menu, you will find a a place where it's written career mode. You click on it and normally 3 options appear.
- Career mode (it's survival mode)
- Career mode legacy (survival mode but you need to do mission to unlock component)
- Custom (creative mode)
After selecting this, you can choose the location you want to start. Avoid north area cause your son character will probably died from cold if he not wear a winter gear.
I hope this help. If you have any question, don't hesitate to ask. There is always someone willing to help.
Have a nice day.

i don't think you play to the game often because it does not exist anymore you only have the one mode but you can have a console in game to modify the dificulty of the game the key is "n" if im not wrong but im on a azerty keyboard so it could be another thing
Wait, they removed Creative Mode completely?
Back in the day you could customize parameters before creating a new game, in order to match your playstile, now you either have to comply with their weird intentions of what career or classic career should be like, or play in "custom" mode.
