Stormworks has, by far, the most accurate water physics of any game i've bumped into so far. That doesn't mean it's very accurate compared to real life, but it means that they've taken into account most of the factors and worked them in with both performance and quality in mind.
Yes, there are strange quirks, like the fact that if you know how, you can make a submersible that shatters the sound barrier, but things are still being worked out.
I guess what I mean't to say was that many of us have some real world experience with machinery in varying capacities and have some idea of how they are supposed to work; and it can be a little frustrating when things don't work the way we 'know' they should.
But, I guess therein lies the fun of figuring it all out.

I have a combined, pump / water jet engines system. Pumps can only operate to 100m and they are mostly crap at that deep, if you use jet engines connected to your main engine crankshaft you can empty your ballast way deeper. Still, cheap trick, compressed air would be way cooler (no pun intended).
Yeah man, but this way you need to do research too! I take as some sort of physics distopia where you first need to do research to understand the world. It's funnier and less frustrating this way.

pretty sure compressed air is already a thing. You can fill premade tanks, not custom, with air, and then use that air to feed a diesel underwater. There is a submarine on the workshop that uses this system.

It's possible but air amount in the tanks won't allow for a meaningful amount of engine run. It will work in a pinch for emergency power. Compressed air would be a multiplier on the tank contents. Additionally with engines you're going to need to determine what to do with the exhaust when at depth. At some point the pressure will be too much that you can't dump it and will need to store it off.
