Unless you find particular joy in achievement hunting otherwise there's no reason to try and get 100% since there will always be achievement that demands extreme dedication that makes the game very restricted and unfun. And Dark Souls 1 has no shortage of those kind of achievements.
A quick glance at all the achievement you'll realise you have to do something like 3 separate completionist runs in a row at minimum to get it all nailed down. They're gonna take a while since you will have to get literally everything in the game, many of the categories requirement are mutually exclusive from one another which necessitate a separate run. it's a pretty large time committment,
So unless 100% games is just what you have to do, then it's probably not worth the time.
This is also not counting things like boss soul weapons and armour where they can be mutually exclusive. For instance, getting Smough's stuff means you will have to get Ornstein's stuff on another playthrough. Then there are like 3 versions of the Artorias' sword, 2 of which have to be acquired in different runs since they use the same boss soul to make. The same will happen to any weapons that share the same boss soul to make. Special events like choosing Frampt and Kaathe, Dark Anor Londo, etc may also require a separate run. I'm sure there are other things.
Your last run will also be a NG+ run about 1/3rd way in since you will have to ascend Gwyn's stuff in the NG+. And for getting the Demon's Great Hammer too, unless you use the Black Firebomb start or just git super gud and spend 20 min fighting Asylum Demon with a broken sword.
Even if you do manage to keep all of them in a reasonable amount of runs, you still have to deal with an astronomical amount of soul, material, reputation (though largely can be done pve) grind, and whatever grinding to get everything.
If you're up for the challenge, then go for it. Just saying it might take a while.
This solves the Demon Great Hammer issue
So yeah, Prepare to Die lol.
+you will need to grind a little for rare weapon drops.
Edit:If grinding always use the ring from Sens and 10 humanity for 410% drop rate.
Check how many times you need to kill optional bosses so you can make their boss stuff.
Kill the optional Stray demon for a Titanite slab he is very weak to bleeding.
There are weapons from Mimics that are partially upgrade you can finish those for the completed upgrade path achievement.
Killing the Asylum demon the first time is extremely easy on NG+.
You need boss souls, and some of their boss weapons/gear are multiples
One requires ... Three.
Heads up, learn from each death. Beware being surrounded.
Suffer stun locking but learn from that. Mobs can get stun locked too.
Suicide missions don't cost gathered material, or gear. Just souls, easy to plan on being low, doing such a run, and not caring about losing 40 souls (when leveling up can require thousands, tens of thousands, and - up)
