i didnt know there was a firekeeper in the jail under firelink, how badly have i screwed up

There are more in the world to be found. The firekeeper soul is good for upgrading your estus flask. Not mandatory to finish the game, but helpful.

Otherwise, become human, kindle your bonfires for 10 flasks and after you get a certain item in the game, you can go up to 15 and even 20 (which is kinda overdoing it).

There will be an event in the game and the firekeeper in the firelink shrine will be gone and you will be able to loot her soul too. However, keep this one until the event is done so you can restore her back. Do not consume that soul, just hold on to it until you finish the said quest.

Also, the Firelink Fire Keeper's soul is unique - but stacks with others
Which will cost you its unique attribute. So store any others you acquire until after the even with the Firelink Fire Keeper

Fire keeper soul can upgrade Estus Flask up to +7.

But to fully upgrade it you must be in NG+.

So it is not a big deal if you consumed 1 but best to never consume them until estus is maxed.
