The rats are good, as long as you aggro one at a time, or pop them from a distance. I use fire in the depths because of the lurkers (green tantinite) next to the bonfire. On the rats themselves I find magic works best. Bow and arrows are okay, but require that you be able to up the damage when dealing with the few Giant rats. Normal sized rats will run away from you, if they can. Giant ones aggro as soon as you're sighted.
Going from the undead Burg is pretty simple. Homeward bone/miracle is great to save the cost of souls when souls are precious. This is the bonfire to the left of the xbow archer on his tower. Once you've kicked the ladder loose you can rest at the bonfire (that you kindled). Then climbing the ladder, doing a fast loop upstairs to convince the drake to kill the skeletons (555 souls) (pays for a homeward bone) then cross the lower level of the bridge to take out more hollows and then do the three rats in the room on the far side of the bridge. There are fewer rats to farm, but it is the earliest for a new run.
Good Luck
