Of you don't do sorceries, you can still have an Int build weapon. You can get an enchanted weapon maxed out before seeing Ornstein and Smough and without offing NPCs needlessly. Starts off a bit slow, but you could get the sorcery buff that makes your weapon magical for 30 seconds, it's not a direct damaging spell.
Faith builds are good too, though those typically end up as Str/Faith or Dex/Faith, just because there aren't so many damaging miracles.

(That's the snag with Faith/Int builds, you end up spending on more than just the 3 stats compared to pure strength or dex.)
It's so much fun, and it's not hard either.
