Bonfire?
This is not the first time I notice some lights from bonfire, they fly into my character and add estus. Is this a “pleasant accident” or a mechanic that I don’t understand?

It's a bug. Normally bonfires are only a light source, just like in real life.

Every time another player is kindling the bonfire (you last rest at it), you get an extra estus. It's a game mechanic. :)

Yeah, you gain 1 estus when someone near your word kindles a bonefire you last rested at.

Also when you kill an invader you will get an Estus as well.
