Get ready to dodge his Grave Lord Swords of Death. Skeletons will arrive, if they aggro then a divine weapon can one shot them. Nito will revive them, regenerate, whatever so be prepared. Do not run around back. Do not run forward to engage Nito after killing the skeletons. You will wake up BIG skeletons and your day will be worse. Although, typically shorter.
There are as many ways to deal with any boss in this game as there are play styles, builds, combos of other people builds, guides, and videos of same. As always, learn their tells, learn when dodging helps and when it doesn't.
Then try and try again. You'll win. Once you beat him, you'll go, "of course" and explain it to some newbie that asks for help. Or, if you are the online type, offer to help them out.
1) Make sure to equip some blooming purple moss. A few of Nito's moves can inflict toxic and you don't want that spoiling things!
2) Equip at least 1 piece of gear that gives you a medium amount of poison resistance. You don't need much, just enough that Nito can't toxic you in 1 hit.
3) Bring a weapon which can perma-kill the skeletons. Options include the Astora Straight Sword (found in Valley of Drakes), Crescent Axe (dropped if you kill Patches), Grant (dropped by the paladin Leeroy invader right before Nito), Silver Knight Spear (dropped by silver knights in Anor Londo), or ANY divine weapon.
If you don't already have a divine weapon, it's super easy to get one. Just take the Occult Club which you got in Anor Londo to Andre the blacksmith and he can modify it into a divine +5 weapon immediately. It doesn't even cost any titanite! Since you mentioned healing miracles though, you probably already have a decent amount of faith and some divine weapons.
4) The crest shield is a great shield for this fight since Nito has several magic attacks
5) Wear the heaviest armor that leaves you below 50% weight
Now for the boss strategy:
The only tricky move Nito has is the one where he screams and then sticks his sword into the ground, which causes a spike to come up from under you. This deals decent damage and can also inflict toxic.
Nito only does that attack if you are quite far away from him, so you'll only need to deal with it during this initial phase.
If you have trouble roll-dodging the attack, don't worry. He can't spam it fast enough to be dangerous on its own. All you need to do is maintain enough health that it can't kill you, so just heal if you get too injured.
Once you land in the boss room, drink a quick estus and get ready to kill the skeletons which will run at you. They usually arrive one at a time, so you can kill them quick and easy. As long as you're using one of the weapons I mentioned, killing them once will keep them dead forever.
There are only about 3 of the basic skeletons, so once you've killed them it's time to close in and fight Nito himself.
Now Nito is one of the slowest bosses in the game. His attacks are extremely slow and have a long, very visible windup before the swing, so you have plenty of time to get ready to roll or get behind him. I don't recommend relying on blocking as your main defense because some of his attacks are heavy enough to break through shields, and he also has a powerful grab attack which must be dodged rather than blocked. The signal for his grab attack is that his hand starts glowing red.
If you DO get hit, just back up out of his reach and drink an estus while he slowly walks toward you, it's pretty easy.
The only dangerous attack he has up close is his magic blast. To do this he will hunch over slowly and crouch down while he charges up. Just run back when he starts doing that. The blast radius is really big, so you can use your crest shield to block if you're not sure you're out of range.
The last thing to remember is that there are two giant skeletons in the boss room, which can be a nasty surprise. But they will never, ever get involved you unless you go running into their section of room. Just make sure to stay in the entrance half of the room and make sure that if you run away to heal you always run toward the entrance.
Once you have a a weapon to perma-kill the initial skeletons, Nito is actually one of the easiest bosses in the game. You can do it!
