its terms of stats.
stats have soft caps and hard caps
soft caps are where you get less for leveling past that point but still enough that it is worth leveling still for certain builds and weapons.
hard caps are where you gain next to nothing going past that point
hard caps are at 40-50 depending on stat, never go past hard caps
important - holding you weapon in two hands increases your strength
strength hard caps at 40 in one hand and at 27 in two hands
unless you are using a weapon that requites more than 40 strength than theres no point going past 40.
since you gain max damage two handing a weapon at 27 strength i would recommend leveling your vit and end since strength soft caps at 20 and vit soft caps at 30 so you get more value for your level, but its your choice.
Provided you're two handing your Man-serpent Greatsword and it's at +15.
STR 27: 521 ATK
STR 40: 536 ATK
STR 66: 565 ATK
(Holding a weapon in two hands increases your STR rating by 50%, so there's no reason to ever go beyond 66 STR, because 66 * 1.5 = 99.)
As you can see the difference between STR 27 and STR 66 is only 44 points of damage. But you waste 39 levels getting there. Better spend those levels on something else, like health and stamina.
Very well explained. I am looking at darksouls.wikidot.com/endurance. When END is 40 you have max. stamina and it will not increase thereafter. In other words, no need to allocate souls there.

END gives you more equip burden beyond 40 so actually it would make sense to lvl that one e.g. if you wish to stack poise
usually you don't need to, but still...not the best example to make the point
