Leaving covenants through betrayal or otherwise get kicked out, will also often incur PvE sins that need to be absolved by Oswald. But such scenario can be circumvented if you just leave covenant by speaking to Oswald or just do it using bonfire (Remastered feature) and you won't get any PvE sin.
PvP sins are a separate system where you get indicted by another player, usually because you invaded and killed them. The only way to reduce PvP sin is by being indicted and get killed by the Darkmoons I think.
If Oswald is not present in your current NG that means PvE sins can no longer be absolved for this run. You can still get around changing covenant without sin even without Oswald because of the bonfire (Remastered), but you won't be able to do anything for the other PvE sins for this run. He will be alive once more in the next NG+, though.
Don't worry about making mistakes like this though, there's always the next NG+. After all, it is only human to commit a sin.... KEH HEH HEH HEH
Besides attacking Solaire to make him "stuck", there are other ways to save him.
You can just join Chaos Servant and open the shortcut and change the covenant back to your chosen one later. Remember to change covenant at the bonfire so you won't incur sins (Remastered new feature). Any and all covenant progression items can be farmed in-game anyway so it's really just a time investment thing.
Or you can acquire Poison Mist or Toxic Mist, and just use it on the shortcut gate to try to kill Sunlight Maggot through the gate without opening it. Watch a tutorial online. The idea is that you basically just use the poison/toxic mist, just completely blast your load over that gate and watch the HP bar showing up from across the other side ticking down and die. Maybe use it a couple more times just to make sure. Your goal is to kill the "main" maggot that has red eyes instead of yellow though unfortunately whether you have successfully killed it across the gate is more of a guesswork as the helmet doesn't teleport into your inventory when slain (it just dropped onto the ground and will stay there for the rest of the game until you pick it up).

As long as you do NOT kill the Centipede Demon and enter Lost Izalith before killing Sunlight Maggot, Solaire can be saved. You must kill the Sunlight Maggot before going into Lost Izalith.
Remember, you can always learn Pyromancy, even as a one-off thing. Since Pyromancy has no build requirement (outside of 1 specific instance which I'll get to), only money/souls is required to use and max out pyromancy. There are multiple ways to get Pyromancy Flame either you start out already having it as pyromancer class or you get one via Laurentius (unless you answered his question "wrong" and basically insults him calling pyromancy "unsavoury", it would be fixed by a visit to Oswald if he's still around though). Even if everything fails, the last resort will take a bit more work but still do-able which is that you upgrade your intelligence to 11 (shouldn't be hard), get egg-head infection, and speak to Eingyi to get a flame from him; you can cure egg-head later.
So chances are, you can still save Solaire.
Still you will 100% in NG++ so you can also just do it in the next Cycle.
But for me it's much easier to simply just find a way (the mist method, or just open the shortcut via chaos servant covenant) to kill the red eye chaos bug (sunlight maggot) before you kill centipede demon and go into Lost Izalith. Which will ensure Solaire's survival.
EDIT: I just read that as long as you refuse to talk to him in Anor Londo, his quest's progression will stop. So it will give you a chance to simply progress to a point you kill the red eyed chaos bug (sunlight maggot) without opening the shortcut or the toxic/poison mist. Apparently he won't even leave after you defeat O&S? You can just go back to progress his quest after you kill the bug.
This also won't lock you out of co-op since you can still talk to him when you first meet him.
Not sure if this is true but if so this is indeed the most pain-free way to save Solaire since you essentially don't need to do anything other than not speaking to him at Anor Londo bonfire.
Need someone to confirm though.
