What happens when i use humanity to revive the fire?

You'll get more estus at this certain bonfire. After you already killed pinwheel and got the rite of kindling you can upgrade your bonfires 3 times, until the max. amount of 20 estus.

Also note that bonfires tied to a flame keeper are already kindled one time (to 10 estus) so after you get the rite of kindling, they can only be kindled 2x more (to 15 and 20).

Not only you - other people that are playing in the same area with you will get one extra estus :)

So THAT'S why I keep randomly getting estus while playing. I've always wondered why I'd suddenly get an extra drink for no obvious reason.

My gf and I figured that out one day when we were getting ready for co-op and she kindled a bonfire and I immediately got an estus

Dark Souls 1 has a lot of interesting multiplayer elements like kindling giving other people estus. Or like Miracle Resonance (bugged and completely broken at this point, but interesting). Or drift items and vagrants.
