Just get close by zigzagging the big obvious water projectiles and hit the heads which can barely even touch you, and you win! The game is very open ended, so just come back when you've gotten stronger or found a better weapon if you can't manage it, although it's easy to kill even we starter weapons and no level increases, once you know the technique.
The only bad part of those fights are the sudden drops into bottomless pits if you get too close.
2. There is a spot on the right that you can actually "jump" up the hill(very specific glitch spot, but not hard to do) and just block until the projectiles kill the blues. Does not work well, but it can be easier for a glasscanon build.
3. The trees can provide cover enough to just rush the hydra and then when up close; block facing the hydra but watch the blues, change blocking directions when necessary, let the hydra kill the blues and don't get punched over the water-cliff.
A 100% phys resistant shield like the Heater and a ton of firebombs is how this is trivialised, but throw bombs from behind the rock/wall in 1.(not that easy from this far, takes practice) and NOW what you have is a "cheesing" method, lol. I saw one where you get close, go to the very far right past the corpse with knight armour and the hydra melee attacks won't hit you, then throw bombs. I could never get it to work.
One of the safe spots is in front of the corpse nearby.
Once you're close enough, at the lake's edge the heads will only try to hit you, or bite?
That is a fairly straight forward dynamic, block, heads lunge, hack, repeat
I have cheesed them from the bridge above. Used a Dragon Bow and laughed my butt off, cause they shot missiles from way the heck over there. Cost arrows, got a laugh. Good Deal
Repeat
Patience is key
