Forget Lord Gwyn for now.
Focus on downing the Knights.
Gear up to beat the first two. Tweak it until you can do five in a row.
Then get to the next one.
When it's time to do the guy on the bridge consider using this combo:
Hawk Ring, Havel's Ring if necessary. Dragon Bow - knocks him off with one shot.
Now, if you have a decent long range bow see if you can knock his health down with it. If you can do enough, you can finish him off with a quick change to a decent shield, and your favorite armor and ring combo.
Okay. Now, we cross the bridge. Don't forget the goodies at the entrance to the bridge, which you already should have. Try your recently established Black Knight gear.
Take them one at a time. Until you can take them consistently, do not advance to the next one.

You want to get pumped up to take on Lord Gwyn. Losing to one of the Black Knight kills that emotion, that feeling of forward progress.
None of that time is wasted, you'll be better in NG(current +1).
Plan your build for Gwyn. Good news, you have plenty of time to change your gear for each of these challenges.

Also, Gwyn is one of the few bosses in DS1 who input reads when you heal, so just intentionally chug the flask to bait his easy to parry swing.
You walk in, parry his first attack (which is always the same), riposte, as he's getting up you use estus, he swings again because lol AI, you parry and yeah, about 5 parries and he's done. Equip the hornet ring if your damage output is low.
Gwyn always starts with his jump attack parry riposte.
While he is down drink an Estus 95% of the cases he will try to heal punish which can be parried and repeat a few times.
Rarely he will try a grab which must be dodged.
If you are bad at parry he has combo attacks where you block the first hit and parry the second with a medium shield.
It is extremely easy to try.
Black Knights are also easy to parry so they can be used to train.
On NG you can also brute force him down.
Heavy poise armor better if it is upgraded for more defence.
High poise dmg weapon like Zweihander,two hand it.
Likely breaks his poise in 2 hits.
During that stagger time you can heal up and recover stamina.
Repeat.
You can also try heavy poise armor+spam greater combustion with highly upgraded pyromancy flame.+power within can help.
Sometimes it breaks its dodge AI........
Gwyn is very weak to fire dmg but very very strong to lighting dmg.
